Next chef to feature on our Hot List is one of the UK’s most celebrated chef’s, Richard Allen.
Recently awarded 4AA Rosettes for his culinary excellence at Rockliffe Hall’s Orangery Restaurant, we were a little taken aback when Rich revealed to us that he didn’t always want to be a chef! Believe it or not, Rich originally wanted to join the Marines!
He would have done so too if a health issue hadn’t prevented him from joining up!
“I was devastated” he said, “because I didn’t have a ‘Plan B’. It was my mum who kicked me into gear and got me to go to Bournemouth & Poole Catering College.
Even though my family were bakers, until that point I had never even thought about cooking as a profession but the discipline really appealed to me. I like a well-ordered kitchen.”
After working with Michel Roux junior and Martin Blunos, Richard found his own version of Marine Life at the Grand Jersey Hotel & Spa, where he gained his ﬁrst Michelin Star in 2011. His passion for using the best local ingredients, recognising the particular tastes of his customers, and his strong belief in team development ensured that he held ﬁrmly onto that Star.
Now he heads up the team as Executive Head Chef at Rockliffe Hall’s Orangery Restaurant in County Durham, where he has developed amazing seasonal menu’s, using the highest quality regional produce, some even foraged from the hotels 365 acre estate!
When we asked Rich what advice he would give to budding chefs, he said: “Be inspired by your surroundings and never be afraid to try!”
